Healthy Nutrient Dense Muffins

Ingredients

2 cup almond flour

1 cup buckwheat flour

2 cup oats

1/2 cup unsweetened shredded coconut

2 tsp baking soda

2 tsp cinnamon

1/2 tsp salt

3/4 cup maple syrup

3/4 cup melted coconut oil or butter

4 eggs

1 cup chopped pineapple

1 cup sweet potatoe puree or mashed bananas

2 cup shredded carrots

1 shredded apple

1 cup processed dates or raisins

1 cup chopped walnuts or pecans

Instructions

Combine dry ingredients and wet ingredients. Fold in carrots, nuts, pineapple, dates. Scoop into muffin tins. Bake at 350 for 30 min.
